The San Jose restaurant, opened in January 2025 by owner Ray Hernandez, is built around generous portions, familiar breakfast favorites and Mexican-inspired sauces that give the menu a distinct local brunch identity.

Hernandez’s personal comfort pick is the Chunky Monkey Pancakes, made with banana slices, chocolate chips, walnuts and bourbon butterscotch glaze. The menu also leans into sweet breakfast plates such as Cajeta Pancakes, Churro French Toast, Dulce de Leche French Toast and a Cheesecake Waffle layered with cream cheese icing and fresh pureed berries.
Diner Classics With Mexican-Inspired Flavor
Mix Huevos keeps classic diner roots while adding California-Mexico flavors. Its chilaquiles are made with house-made tortilla chips designed to stay crisp under tomato salsa, red Rojo sauce, green tomatillo Verde or a 12-ingredient mole.
Guests can add chicken or Harris Ranch beef, including tri-tip, New York steak and ribeye. The restaurant also serves burgers, sandwiches, the Cambrian Club Sandwich and several eggs Benedict options.
A Family Restaurant Path in San Jose
Hernandez learned to cook at a young age, partly from an aunt and through his own kitchen experiments. Restaurant work also runs in his family. His father opened Mariscos Costa Alegre in San Jose in 2018, and Hernandez later managed that location before taking over a former Benedict’s space.
He said the shift to brunch allowed him to focus on breakfast service while spending more evenings with his children.

Service is central to the restaurant’s appeal. Hernandez says he wants staff to check in often and listen closely to customer feedback. Regular customers Barbara and Dan Stark praised the Wellington, a steak dish served with either tri-tip or New York steak, saying it is large enough to share.
